If you follow me on Twitter, you know that I felt a tickle in my throat this weekend. You know the one. That sneaky tickle that taunts you with the threat of a cold. I think it's totally unfair. Moms should not get sick. We don't get to take sick days off work. Toddlers do not stop having tantrums and the dishes do not wash themselves.
So my only option was to fight this bad boy. On Sunday I looked in the fridge for the most nutritious ingredients I could find. Pomegranate juice, frozen and fresh blueberries, fresh spinach, and a banana come together to make an icy cold sweet treat that kicked this cold's butt. This smoothie is a great immune booster during cold season, but even better, it's a delicious and easy anytime snack. Try substituting your favorite frozen fruit.

Berry Spinach Smoothie
makes 2 small smoothies
1/2 cup pomegranate juice
1 cup fresh baby spinach
1 cup frozen blueberries
1 banana
1/4 cup fresh blueberries (optional garnish)
Blend all ingredients in a blender until smooth. Add more juice if needed to blend. Garnish with fresh berries if desired.

ReplyDeleteYum. Headed out to do my grocery shopping in a few... I'll have to pick up some pomegranate juice to make this!! I love smoothies with spinach, apple, banana, yogurt and grapes, too (especially with their rockin' green color)!

ReplyDeleteI drink spinach smoothies every day now. You are right - you don't even taste the spinach. So delicious and so healthy. I add a tablespoon of ground flaxseed and sometimes a spoon of ground almond as well.
ReplyDeleteThis is hilarious! I must of been feeling the blueberry vibe as well because I made a similar smoothie yesterday. Mine was not as pretty as yours but it tasted amazing. I used 5 pieces of dinosaur kale and orange juice instead of the pom juice and the spinach but otherwise our smoothies were pretty much the same :) Oh, and I had some flax seed but I always add that. I may try this with the pom juice to get some extra vitamins!

ReplyDeleteI have been wary of tossing spinach into my smoothies. I know, I know - vitamins etc. but the ide aof rinking spinach scares me a bit. But your adorable little one seems to be happily enjoying it with a big straw, so I think I'll have to brave it!
