Grilled Pizza with Figs, Gorgonzola, Prosciutto, and Basil

Ah Summer... I love your colors. 
And fresh produce. 
And flowers and bright morning light. 
 
And late afternoons grilling pizzas. 
It's not a new flavor combination, but fresh sweet figs, salty prosciutto, and Gorgonzola come together to make my favorite pizza. 




Grilled Pizza with Figs, Gorgonzola, Prosciutto, and Basil

makes 2 pizzas, serving 6-8

2 prepared pizza doughs, that have rested at room temperature for one hour covered so they don't dry out
8 oz fresh mozzarella cheese, sliced or in small balls
8 oz crumbled Gorgonzola cheese
1/2 large sweet yellow onion, halved and thinly sliced
about 1 cup fresh black figs, cut into wedges or slices
3 oz prosciutto
1 cup fresh basil leaves

Heat grill over medium heat. Oil grate.

Roll dough into two long rectangles. Have all toppings next to grill. Place dough grill and cook until there are nice dark grill marks, about 3 minutes. Flip over. Quickly top crust with mozzarella, Gorgonzola, onions, and figs. Cook until cheese has melted and bottom of crust has grill marks. Remove from grill and top with prosciutto and basil.

  2. Oh you should run courses, I would sign up really I would. I wonder if you could do it online? We could sign up and learn to cook something once a week and send in pics of our efforts!

  8. Yum! I've had something similar at a place called Crave...only they had grapes instead of figs. SO tasty. I love the pics for this one.

  13. I love grilled pizza! My mother introduced me to the concept last summer. Such a fun and delicious way to enjoy a treat!! :) My favorite toppings are arugula and pineapple. Love the fig idea!

  16. You are spoiling me with all these photos here, that's the pizza I know and love, nothing beats real, homemade pizza. Fresh figs, are simply the best, one of the things I love about Japan, is the abundance of figs.
