This peach ricotta toast is one of those “no recipe” recipes I make every summer. When peaches are perfectly ripe, they don’t need much—just creamy whipped ricotta, a drizzle of honey, fresh basil, and toasted walnuts on really good sourdough.

It’s simple enough for breakfast, beautiful enough for brunch, and one of my favorite ways to celebrate peach season.

The secret isn’t complicated—it’s using the best ingredients you can find. Homemade sourdough, whole milk ricotta, perfectly ripe peaches, fresh basil, and good honey make all the difference.

One note: this is best assembled right before serving. The juicy peaches and ricotta will soften the toast if it sits too long.

How to Make Peach Ricotta Toast

Toast the sourdough until golden and crisp.

In a small bowl, whisk together the ricotta and a small drizzle of honey until light and creamy.

Spread the whipped ricotta over the warm toast, then layer on the peach slices. Finish with toasted walnuts, fresh basil, another drizzle of honey, and a pinch of flaky sea salt.

Serve immediately.

  • I like to whip up about a cup of ricotta and sweeten to taste with honey. It's easier to whip that way and you'll have extra for the next few days (or for more toasts to share).

  • Assemble just before serving for the best texture.
