Let’s Talk Drinks

Start the evening with a little sparkle—an authentic Aperol Spritz if you love a classic Italian aperitivo, or a French Gimlet for something a bit more botanical and refined.

That said, I’m drinking less these days, so we enjoyed De Soi Spritz Italiano with a squeeze and slice of blood orange and lavender sprig garnish and didn’t miss the alcohol. 

The Menu

Bread: Homemade Sourdough

I always serve warm slices of my go-to Sourdough Bread Recipe with good butter or olive oil. It sets the tone and gives guests something cozy to nibble on while you finish prepping. This time, I folded in kalamata olives and fresh rosemary and served it with Isigny Sainte-Mère butter, which is the best butter we’ve ever had and is made with flaky sea salt. 

Salad: Spring Asparagus Salad with Feta, Avocado & Dill

A spring salad with asparagus, avocado, feta cheese, watermelon radish, and dill. This vibrant Spring Asparagus Salad is a celebration of the season. It’s fresh, herby, and tossed in a lemony Dijon vinaigrette. Make the vinaigrette and blanch the asparagus ahead of time for easy assembly. It’s highly adaptable – you could even add strawberries. I recommend blanching the asparagus early in the day to save time later on. 

Sides: Roasted Baby Potatoes 

I also served baby roasted potatoes with herbs, which are always a hit. I didn’t get any photos, but you can see them in the video at the end. 

Main Course: Citrus Baked Salmon with Chili Crunch & Fresh Dill

Citrus Baked Salmon is a showstopper main course that’s deceptively easy. The salmon has a bed of orange and lemon slices and gets a bold, flavorful kick from chili onion crisp. It’s light, flaky, and packed with flavor.
