Chia Seed Peanut Butter Cookies
makes about 12
1 1/2 cups rolled oats
1 teaspoon baking powder
1/2 cup all purpose or gluten-free flour
1 1/2 Tablespoons chia seeds
1/4 cup butter or coconut oil, room temperature
1/2 cup brown sugar or 1/4 cup Stevia baking blend
3/4 cup peanut butter
2 eggs
1 teaspoon vanilla
1/2 cup dark or semisweet chocolate chunks or chips
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
In a medium bowl, whisk together oats, baking powder, flour, and chia seeds. Set aside.
In the bowl of an electric mixer, beat coconut oil with sugar until creamy. Add peanut butter, eggs, and vanilla. Slowly stir in oat mixture to combine. Stir in chocolate chips.
Place heaping tablespoons of dough onto cookie sheet. Press dough into balls with hands, as dough will be crumbly. Bake 12 minutes. Cool.

I have read about them before. They are new to me. I have been using flaxseed. I will definitely try this though since you posted such great benefits over the flaxseed.
Ok, you have sold me on these cookies. I have seen various chia seed cookie recipes around but have been nervous to try them out on my kids. They have tried chia seeds on their oatmeal and in smoothies and they are not fans, but maybe if they are baked in a cookie with chocolate chips they will be 🙂

I put chia seeds in almost every thing I make! Oatmeal, granola, quinoa, muffins, salad, cookies, smoothies, etc…. Nice to see this seed get some attention! Nice job Marina, I made cookies last night too (with garbanzo beans…not as bad as it might sound!

I've never have had chia seeds before, simply because I couldn't find them! So, instead, I use flax seeds and meal (hey, better than no fatty acids, right?)

Thank you for introducing me to chia seeds. These cookies came out great. My sister wants to try them but I don't know if I want to share!
I made some of these with peanut butter and tried another recipe with pumpkin. Both turned out so yummy! I used 1 cup of pumpkin instead of the peanut butter. I cooked them about 2 min. longer than the peanut butter ones and they turned out great! I forgot to add cinnamon to the pumpkin ones until they were on the cookie sheet so I just sprinkled some on the top. 🙂

tried the recipe and the didn't turn out quite right. Ended up with dried out balls of dough. did you mean baking soda instead of baking powder?
Dear Anonymous, sorry you were disappointed. I did use baking powder. As you can see, the other reviews have been great. There are many different variables in baking. Perhaps they were cooked too long? Or the peanut butter you used was more dry? These are not meant to be chewy cookies, but rather a healthier snack cookie that has more of a crumbly oat texture.
i tried cooking with chia seeds for the first time today–i made some peanut butter chia seed granola. i'm officially a convert. these cookies are definitely on my to-make list. any day i can have a cookie for breakfast is going to be a good day!
Did you use Chunky Peanut Butter or smooth?
I used chunky from Trader Joe's but smooth might make it less crumbly. I would use whatever you have on hand. Good luck!

I used coconut flour and replaced peanut butter with almond butter. Love this recipe!
I love this recipe—as I’ve been searching high and low for a gluten free cookie recipe.
I added an additional egg and additional tsp of vanilla. For the next two substitutions—I used these because it’s what I had in the pantry. For the rolled oats component—I emptied a few packets of Ocean Spray instant oatmeal with cranberries for the 1 and ½ cups of oats. For the flour portion I used ½ cup of Bob’s Red Hill gluten free chocolate cake mix. All other ingredients of the original recipe were used. The dough was very creamy, not crumbly and I loosely formed six dollops of dough on the cookie sheet and baked for 13 minutes (repeat for second batch for a total of 12 cookies).
Tonight I used this recipe again, still with the additional egg and additional tsp of vanilla but instead used Arrowhead Gluten Free All Purpose that has the Xantham gum in it, and for the rolled oats—used packets of Better Oats Apples & Cinnamon to form the 1 and ½ cups of oats. Dough was very creamy. The result was a moist and soft cake-like cookie. Can’t wait to try this recipe using a cup of pumpkin! Thanks again—my family really loves these cookies!
oooh, great idea! I use pumpkin in many of my baking recipes rather than oil, so this will be great. i just made them with peanut butter and love, love, love them!

These are in the oven as we speak! I had a hard time making them into balls so I made 12 then I pressed the rest into bar pan. I hope they turn out.

I made these and they are really good, I love chia seeds but haven't used them in baking until today. When I got to the end of the recipe where you said the dough will be crumbly I thought I did something wrong because mine was very smooth and creamy, I went over the recipe again and realized I had only added 1/4 cup creamy peanut butter. After I added the rest 1/2 cup it was still pretty runny so I had to add more flour, I did use all purpose flour not gluten free, maybe that's why it wasn't crumbly. Even after the additional flour it was no where near what I would call crumbly but I baked them and they turned out great, I love the slight crunch the chia seeds add! Thanks for the recipe!

Made these today. My dough weren't crumbly at all (which worried me before I put them in the oven as I have bad luck with cookies), I used Adams Creamy Peanut Butter, and they came out perfect. My daughter (7) proclaimed them “The best cookies I've ever eaten” and a few minutes later, still swooning, “Oh Mama! I could eat these every day! I love them so much.”

Stirred up last night with Peanut Butter & Co. dark Chocolate Dreams for the peanut butter and whole wheat flour. Baked them this afternoon. Delicious! No need to make any other kind of cookies!
Yum! We used coconut oil instead of butter, almond butter in place of peanut butter. We also used whole wheat pastry flour and thick rolled oats. Tasty and not too sweet. 🙂

Ohhhh…whole wheat pastry flour would be great! I used cacao nibs and coconut sugar and they turned out wonderfully! I served them with scrambled eggs for breakfast and my children thought they were being soooo naughty!! 🙂

Hi Christine! If you read the comments you'll see that people have been loving them! To me 281 calories is not a lot for breakfast. As I mentioned, I had one for breakfast before a workout because they are packed with protein and fiber and are filling. If you want to cut calories, replace the brown sugar with Stevia 🙂 Personally I don't worry about healthy calories from things like chia seeds and peanut butter. I worry about the ones that make you fat – sugar 🙂
I just found this recipe on Pinterest. But, with that much sugar, I don't consider them very healthy. Have you made any substitutions for that since you posted this recipe. I will try them with coconut flour, but was wondering about stevia a sub for the brown sugar.
Hi there, if you were to make a batch of chocolate chip cookies they would have 1.5 cups of sugar, so I still think these are a lot healthier with only 1/2 cup of brown sugar. However, I pretty much always use Stevia baking blend. Other people prefer the rich brown sugar flavor in these. It's a personal preference decision 🙂

I'm really surprised the chia seeds were used dry. The nutritional value would be better if instead of dry chia seeds, chia gel was used. Also, for those that aren't fans maybe of the “seed” texture a quick spin of chia gel in a food processor gives the nutrients minus the seedy texture. Chia gel can be used to replace 1/2 of the butter being used in many recipes as well.
I enjoyed making this recipe. The chia seeds are awesome! I'm going to be cooking more with this new found favorite. The cookies hit the spot when I feel weak for something sweet. Thanks for the post.
If you soak the seeds in water to make a gel you can then add a few spoonfuls to their smoothies. y son does not even notice when I add the gel and then blend.

Marina, I tried making these with coconut oil instead of the butter. I have made them many times with butter with awesome results. The oil made the cookies fall apart in the oven and they were super oily–like oily enough to go through several layers of paper towels. I am just wondering what I did wrong?? Any suggestions (besides going back to butter–lol). Thanks!
Darn! I'm so sorry about that! I have had good results with subbing coconut oil for butter is most cookie recipes. Was your coconut oil melted or the same consistency as the butter you usually use? That's the only issue I can think of. I will have to try it and get back to you. Sorry 🙁
