Macadamia Nut Crusted French Toast
with Caramelized Bananas and Passion Fruit Cream
* 6 large eggs
* 1 1/2 cups coconut milk
* 1/2 teaspoon pure vanilla extract
* 1 tablespoon honey
* 1 teaspoon orange zest
* 1/2 teaspoon salt
* 1 large loaf challah or brioche bread
* 1 cup ground macadamia nuts
* 1 tablespoon unsalted butter
* 1 tablespoon vegetable oil
Passion fruit cream:
1 cup whipping cream
4 tablespoons passion fruit juice
4 bananas, sliced
2 tbsp butter
2 tbsp brown sugar
Preheat the oven to 250 degrees F.
To make the whipped cream, beat cream on high until peaks form. Add passion fruit juice and beat until incorporated. Referigerate.
In a large shallow bowl, whisk together the eggs, coconut milk, vanilla, honey, and salt. Slice the challah in 3/4-inch thick slices. Soak as many slices in the egg mixture as possible for 5 minutes, turning once. Then coat with macadamia nuts.
Heat 1 tablespoon butter and 1 tablespoon oil in a very large saute pan over medium heat. Add the bread and cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked French toast on a sheet pan and keep it warm in the oven. Fry the remaining bread slices, until it’s all cooked.
To make the bananas, heat butter and brown sugar over medium heat. Add bananas and cook, turning until caramelized. A splash of rum would be great in there too 🙂
