I can’t believe it’s already back-to-school time! It’s such a fun and exciting time, but I’ll be honest, it stresses me out a little too. Getting kids’ breakfasts and lunches made, finding that stray shoe the dog hid under a bush, and everyone out the door on time can feel like a marathon! Any parent knows that, “I need a snack!” is a favorite kid phrase. Being able to reply, “help yourself!” is a major sanity saver. So this week I got organized and am sharing some of the real food prep ideas to hopefully make your life a little easier during this busy season too.

I notice that when I have snacks prepped and ready to go at their eye level, my kids choose better foods. When they open the fridge or pantry and immediately see fresh fruit, carrot sticks, washed berries, energy balls, and snack packs, they will happily grab those instead of processed junk foods. Cutting up fresh fruits and veggies takes just a few minutes and save so much time on busy mornings. I store carrot and celery sticks in water. Berries stay fresh longer after a rinse in 1 cup of vinegar diluted with 3 cups water. I put them in little grab-and-go cups for snacking or adding to chia pudding, another easy prep-ahead favorite.

  1. Soak berries in a solution of 1 cup vinegar and 3 cups water. Rinse and let dry completely on towels before transferring to the refrigerator. Peel and cut carrots. Store in water, changing the water every day or so.
  2. Organize as you like and enjoy the snacking!
