Super Skinny Double Chocolate Oat Cookies (gluten free)
Healthy Double Chocolate Oat Cookies

Makes 12 cookies
1 1/2 cups rolled oats
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon sea salt
8 stevia packets or about 2 1/2 teaspoons (I used Trader Joe’s brand)
1/2 cup applesauce or pureed banana (the applesauce in not noticeable, the banana is)
1/3 cup 2% Greek yogurt
1/2 teaspoon vanilla extract
1 tablespoon agave
3 tablespoons chocolate chips
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a silpat.
Pulse oats, cocoa powder, baking powder, salt, and stevia in a food processor or blender until oats are blended to your desired fineness. You can leave them almost whole, or blend them until finely ground. Add applesauce, yogurt, vanilla and agave and pulse again until just combined. Stir in chocolate chips.
Drop dough by the tablespoonful onto prepared cookie sheet. Bake for 15-17 minutes. Cool slightly. Cookies are best when they are still a little warm and chips are melty.

made these yesterday and they are super fab. added 1 tsp espresso powder and 1/4 tsp chipotle powder for a lil' kick. they taste like a super dense brownie. a chef friend said if i hadn't told her that it had no eggs, no flour and no refined sugar she wouldn't have guessed. mine came out to 70-75 cals each using stevia “cup for cup”…and i used Guittard chocolate discs. the finished cookie looks a little on the dull side, but i'll find a way to fix that when i make them AGAIN and AGAIN…

I tried to comment on this before but my phone won't let me comment, oh well! I was saying that these look so yummy!! But I'm gluten intolerant and must say that unfortunately oats have a very high gluten content, they aren't gluten free. They're really good for you though! Maybe putting gluten-free rolled oats would make a good substitute 🙂
Hi Morgan, thanks! The good news is that pure oats are in fact gluten free. The bad news is that they are often contaminated from being processed in facilities that also process wheat. Gluten-free oats should not be hard to find 🙂
Is 1 tsp stevia the same as 1 tbsp white sugar? Could I use normal sugar?
Hi there, I didn't try this with normal sugar so I can't say for certain how much to use, but it should be about 1/3 cup of regular sugar.

hmmm… mine weren't dry, if I remember correctly. But please keep in mind that these are very healthy cookies – no butter or refined sugar. They're not meant to be like a super rich decadent cookie. They're meant to be a healthy alternative that can be eaten for breakfast or healthy snack or dessert.
