Macadamia Nut Crusted Mahi Mahi
This is quite an appropriate post for me, as I am in Maui at the moment. I made this dish about a week ago and it was a big hit with my family. A perfect summer dinner. They don’t know how easy it was to make and that I was actually just sitting in the kitchen sipping a nice Chardonnay half the time they thought I was cooking ๐ That’s my kind of recipe!
I served the Macadamia Nut Crusted Mahi Mahi with my super easy mango salsa couscous and sauteed kale. To fancy it up a little, I used a ladle to make a round scoop of the couscous.
Macadamia Nut Crusted Mahi Mahi
Serves 4
4 Mahi Mahi fillets (or other white fish – just use the freshest kind you can find)
salt and pepper
1 egg beaten
1 cup macadamia nuts
3/4 cup sweetened shredded coconut
1 tablespoon flour
Preheat broiler.
Season fish with salt and pepper.
Pulse macadamia nuts, coconut, and flour in a food processor until coarsely ground. Dip fish fillets into egg wash and then dredge into macadamia nut mixture. Place on cookie sheet coated with cooking spray and broil just a few minutes on each side (will depend on thickness), until golden. Be careful, the crust burns quickly, don’t put it too close to the top of the broiler.
To make the Mango Couscous:
Follow directions on box to cook couscous. Then stir in some store bought (or homemade if you have time) mango salsa.
Wow, how easy is that? I’ve had fish with nut crusts in restaurants before. I can’t believe it’s so simple ๐ We love the white fishes, not a salmon lover at all. I’m saving this recipe. I’m going to have to try it.
