Salmon with Cucumber Yogurt Sauce
This is my Greek style salmon. I got the idea for this recipe after eating a gyro last August at the Santa Barbara Greek festival. I like the clean taste of the sauce with the rich salmon. This is a very quick and easy recipe.

3 TABLESPOONS olive oil
1 TEASPOON salt
1 TEASPOON pepper
4 salmon filets
1 CUP plain yogurt
1 TABLESPOON honey
2 TABLESPOON Dijon mustard
2 TABLESPOON chopped dill
1 TABLESPOON white wine vinegar
2/4 CUP diced hothouse cucumber
Preheat grill or grill pan to medium-high.
Whisk yogurt, honey, mustard, dill, and vinegar together. Set aside.
Brush salmon fillets with olive oil and sprinkle with salt and pepper to taste.
Cook until desired doneness, about 7-10 minutes, depending on thickness of fish.
Spoon yogurt sauce over salmon and garnish with chopped cucumber.
Today I felt like eating salmon, and so I remembered this recipe that I've made once before. I like that it was easy to find this one….went to the right side of your blog, and clicked on Seafood…..I went thru some stuff before I found this, and reflected on how much better your photography is now compared to when I started to read your blog. I think I even recommended you to attend a food photography workshop at Brooks when I first started reading your blog. They have 3 days courses ever so often where people can learn almost everything Brookies learn in 7 weeks and pay $$$$$$$$$ for, but the weekend workshop is much cheaper. Anyway now your photos are looking so professional. No need of a workshop. Some people just got the talent whereas others need a photo-class….some graduate from Brooks and can only take a technically right picture, but with no artistic feel or colors that go together. Some get a good camera and read the manuel and learn from mistakes. Anyway the salmon was delicious. I didn't get the pita-bread with it since I'm gluten-free and I also try not to mix starch with protein.
