Greek Salad With Chickpeas

Easy, flavorful, vegetarian and vegan Greek salad with chickpeas and a light Greek salad dressing.

INGREDIENTS

-  Hothouse cucumber -  Roma tomatoes -  Red bell pepper -  Yellow bell pepper -  Kalamata olives -  Red onion -  Chickpeas -  Fresh herbs -  Extra virgin olive oil -  Red wine vinegar -  Dried oregano - Salt  -  Freshly ground    pepper 

INSTRUCTIONS

In a large serving bowl, combine the cucumber, tomatoes, peppers, olives, onion, chickpeas, and herbs.

In a small bowl, whisk together the olive oil, vinegar, and oregano.  Dress the salad with the Greek dressing and toss to combine.

2:

Cover and store in the refrigerator until ready to eat.
