Roasted Red Pepper Hummus

This just might be the best, most flavorful hummus recipe. Roasted red pepper hummus is a delicious and healthy appetizer or snack.  Serve it with cucumber spears or pita, or use it as a veggie sandwich spread.

INGREDIENTS

-  Red bell peppers -  Tahini -  Fresh lemon juice -  Chickpeas/garbanzo -  Garlic -  Extra virgin olive oil -  Aquafaba -  Ground cumin -  Salt -  Cayenne pepper -  Fresh chives

INSTRUCTIONS

Move your oven rack 5 inches from the broiler. Turn the oven broiler to 500 ° F. to preheat.

TO ROAST THE PEPPERS

Remove the core of the bell peppers. Cut into large flat pieces. Place the peppers skin-side up on a baking sheet.

Add the tahini and lemon juice to a blender or food processor and process on high for 1 minute.
