Quinoa Salad With Grapes

This quinoa salad with grapes, basil, shallots, feta and baby kale is a flavorful, hearty, protein packed salad you can make ahead and enjoy for days to come.

INGREDIENTS:

- uncooked quinoa - vegetable broth or water - lemon - extra virgin olive oil - maple syrup - white balsamic - halved red grapes - fresh chopped basil - shallot, peeled and thinly sliced. - cubed feta cheese - pepitas or walnuts - baby kale or spinach - salt and pepper to taste
