Easy Taco Soup Instant Pot

Vegetarian easy taco soup made in the Instant Pot or Crockpot is the easiest dump-and-go meal!  This healthy plant-based meal takes just a few minutes to prepare and is hearty and warming.

INGREDIENTS

EASY TACO SOUP: -  Yellow or white onion -  Bell pepper -  Diced tomatoes -  Red kidney beans -  Frozen corn -  Vegetable broth -  Taco Seasoning -  Salt and pepper

INSTRUCTIONS

Wash and dice the onion and bell pepper.

1:

Add all the ingredients to the instant pot (except the garnish), stir.

2:

Close the lid, make sure it is set to its “Sealing” position, select manual high pressure and cook for 2 minutes.

3:

Let the pressure release naturally for 10 minutes and release the rest of the pressure.
