EASY COCONUT CHICKPEA CURRY WITH BUTTERNUT SQUASH AND SPINACH

This quick and easy chickpea curry is packed with flavor and nourishing ingredients like spinach, butternut squash, turmeric, coconut milk and more. It’s my go-to weeknight dinner and so comforting!

WHAT’S In EASY COCONUT CHICKPEA CURRY WITH BUTTERNUT SQUASH AND SPINACH :

– 3 tablespoons coconut or extra virgin olive oil, divided – 2 lb. (32 oz.) cubed butternut squash – 1 yellow onion, peeled, halved and thinly sliced

INSTRUCTIONS

Preheat the oven to 400 degrees F.

1:

Place cubed butternut squash in a baking dish and drizzle with a tablespoon of oil.

2:

Sprinkle with a pinch of salt and toss to combine. Roast until tender, about 25 minutes.

3:

Meanwhile, add another tablespoon or two of oil to a large saute pan over medium heat.

4:

Add the onion and saute until tender. Add one tablespoon curry paste and stir in.
