Vegan Caesar Dressing

Easy vegan Caesar dressing for making the most delicious vegan Caesar salads! Cashews make this dressing extra creamy and dairy-free.

Ingredients

  • 1/2 cup raw cashews, soaked overnight or at least 2 hours in hot water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon capers
  • 2 cloves garlic, peeled
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon vegan Worcestershire sauce
  • 1 teaspoon nutritional yeast
  • 1/4 cup unsweetened plain almond milk
  • salt and pepper, to taste

Instructions

  1. Drain and rinse the soaked cashews. Place in a blender with the lemon juice, capers, garlic, Dijon mustard, Worcestershire sauce, nutritional yeast, and half the almond milk.
  2. Blend until smooth and creamy, adding more almond milk to reach the desired consistency.
  3. Use your vegan Caesar dressing on salads or veggies. Store sealed in the refrigerator.
