Spinach and Feta Egg White Wraps 

Spinach, egg whites, and tomatoes come together for a delicious high protein breakfast.

Ingredients

  • 1 cup AllWhites® egg whites
  • 2 teaspoons prepared basil pesto
  • 1 1/2 cups fresh baby spinach leaves
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons mayo (optional)
  • 2 (2 oz.) whole-wheat flat breads (or gf wraps, tortillas, etc.)
  • 2 medium tomatoes, thinly sliced

Instructions

  1. Coat a skillet with cooking spray and place over medium heat.
  2. Beat egg whites with pesto to combine. Pour into skillet and stir in spinach. Cook until eggs are cooked through but still moist and soft. Sprinkle with feta, cover, and cook one minute longer.
  3. Spread mayo on flat breads. Arrange tomatoes on top. Cut egg mixture in half and place over the tomatoes. Roll up and enjoy!
