VeganĀ  Lentil Soup

Creamy, hearty, easy vegan lentil soup with mushrooms is sure to warm and nourish on cold days.

INGREDIENTS

- Olive or avocado oil - Yellow onion - Carrots - Celery - Garlic - Crimini mushrooms - Vegetable broth - Dried green lentils - Bay leaf - Fresh thyme

INSTRUCTIONS

In a large pot over medium heat, saute the onion, carrot, and celery until beginning to soften.

Add the vegetable broth, lentils, and herbs. Bring to a simmer, partially covered. Simmer until the lentils are tender, about 30-40 minutes.

Serve in bowls and garnish generously with fresh parsley.
