Vegan Gingerbread Cookies

The perfect vegan gingerbread cut-out cookies made with coconut oil and wholesome ingredients. These not-too-sweet gingerbread cookies are perfect for decorating, snacking, or leaving for Santa.

INGREDIENTS

-  All-purpose flour -  Whole wheat pastry flour -  Baking soda -  Baking powder -  Sea salt -  Ground ginger -  Ground cinnamon -  Ground cloves -  Melted coconut oil -  Coconut sugar

INSTRUCTIONS

In a medium bowl, whisk together the flours, baking soda, baking powder, salt, ginger, cinnamon, and cloves.

In the bowl of a mixer, beat together the coconut oil, coconut sugar, molasses, flax egg, vanilla, and almond milk.

Flatten dough into a disk and wrap with plastic wrap. Refrigerate for at least two hours or overnight.

Preheat the oven to 375 degrees F. On a lightly floured surface, roll dough to 1/4 inch thickness.
