Lemony  Lentil Soup 

This simple recipe makes a big pot of light and bright summery lemon lentil soup to nourish.

INGREDIENTS

•  Extra virgin olive oil •  Yellow onion •  Diced or sliced carrots •  Diced celery •  Salt •  Garlic •  Fresh grated ginger •  Vegetable broth •  Dried turmeric •  Green lentils •  Zest of 1/2 lemon •  Juice of 3 small lemons

INSTRUCTIONS

1:

Heat oil in a large Dutch oven set over medium heat. Add the onion, carrots, celery, and salt and sauté until softened, about 5 minutes.

Add the garlic and ginger and sauté another minute longer. Add the broth, turmeric, and lentils.

Reduce heat to low and simmer, partially covered, for 45 minutes.

2:

Stir in the lemon zest and juice and simmer another 30 minutes. Add more broth if needed.
