Dark Chocolate Truffles 

These homemade truffles are dairy-free, vegan, and gluten-free.  They make a lovely homemade holiday gift.

INGREDIENTS

TRUFFLES •  Bittersweet chocolate •  Semisweet chocolate •  Canned coconut cream •  Vanilla extract •  Brewed coffee COATING IDEAS •  Powdered sugar •  Cacao powder •  Crushed peppermints

INSTRUCTIONS

Place the finely chopped bittersweet and semisweet chocolates into a medium sized bowl.

In a small saucepan over medium heat, bring the coconut cream (solid and liquid parts) to a boil. Remove from heat and let cool 20 seconds.

2:

Let cool and harden at room temperature for an hour or in the refrigerator for half an hour.

3:

Line a cookie sheet with parchment paper. Use two small spoons or a small cookie scoop to create roughly 1-inch dollops and place on the lined cookie sheet.
