Brussels  Sprouts Tacos

Roasted Brussels sprouts star in these nutritious tacos.  Add in any or all of the extra toppings.

INGREDIENTS

•  Brussels sprouts •  Extra virgin olive oil •  Sea salt •  Freshly ground pepper •  Black beans •  Taco seasoning  •  Radishes •  Cheddar or Mexican     cheese blend •  Guacamole •  Lime

INSTRUCTIONS

Preheat the oven to 400 degrees F. Cut a thin layer off bottoms of Brussels sprouts and remove any brown outer leaves.

1:

Cut Brussels sprouts in half or quarters if they are very large. Place in a large baking pan and coat with oil, salt and pepper. Roast until tender, about 35 minutes.

In a saucepan, heat black beans with taco seasoning over medium low heat.

2:

Place roasted Brussels sprouts on a platter and serve with all the fixin's. Tacos can be made in lettuce wraps or tortillas.
