Billie Eilish’s Peanut Butter Cookies

Billie Eilish’s peanut butter cookies are naturally vegan and gluten-free.  Oat flour peanut butter cookies without eggs or dairy are soft, chewy, and loaded with melty chocolate chunks.

INGREDIENTS

•  Brown sugar •  Peanut butter •  Vanilla extract •  Oat flour •  Baking soda •  Salt •  Almond milk •  Chocolate chips or chunks

INSTRUCTIONS

Preheat the oven to 350° F. Line a cookie sheet with parchment paper or a silicon baking mat.

In the bowl of mixer, cream together the brown sugar, peanut butter, and vanilla.

In another bowl, whisk together the oat flour, baking soda, and salt.

Beat the oat flour mixture into the peanut butter mixture. Add the plant-based milk and continue beating until the mixture forms a dough.
