Easy Lemon Crepes with Blueberry Sauce 

These beautiful crepes are filled with an easy, creamy lemon filling and topped with blueberry sauce.

INGREDIENTS

•  Frozen blueberries •  Juice of 1 orange •  Milk •  Eggs •  Lemon zest •  Stevia •  Vanilla extract •  Melted coconut oil     or butter •  Flour 

INSTRUCTIONS

For the blueberry sauce, simmer blueberries and orange juice, covered in a saucepan over medium heat  until blueberries break down into a sauce, about 15 minutes.

Mash whole berries with the back of a spatula or transfer to a blender and puree.

Meanwhile, make the crepes. In a medium bowl, whisk milk, eggs, stevia, zest, vanilla, and melted coconut oil or butter until just combined.

Whisk the flour into the wet ingredients. Lightly coat a  8 to 10 inch non-stick frying pan with cooking spray, butter, or oil and place over medium heat.
