Garlic Mashed Cauliflower

Mashed cauliflower! Cauliflower “mashed potatoes” are a creamy and cozy healthier side dish perfect for the holidays or any day. This garlic cauliflower mash recipe is keto and vegan friendly.

INGREDIENTS

-  Garlic -  Olive oil -  Cauliflower -  Butter -  Nutritional yeast or Parmesan -  Sea salt -  Freshly cracked pepper -  Chives

INSTRUCTIONS

To roast the garlic, preheat the oven to 425 degrees F. Cut about 1/2" off the top of the garlic. Drizzle the cut side with olive oil.

To steam the cauliflower on the stovetop, bring about an inch of water to a boil in a pot fitted with a steamer basket.

Or, to steam the cauliflower in the Instant Pot, add 1 cup of water to the Instant Pot liner and fit with a steamer basket.

Carefully remove the steamer basket from the pot and let some of the water evaporate from the cauliflower for a few minutes.
