Green Goddess Rice Bowl With Green Goddess Dressing

This easy vegan green goddess dressing recipe is bright, zingy, and perfect for dipping veggies, as a salad dressing, or drizzling over grain bowls.

INGREDIENTS

- Ripe avocado - Garlic - Apple cider vinegar - Fresh lemon juice - Italian parsley - Fresh basil - Roughly chopped green onions - Sea salt - Water

INSTRUCTIONS

Cut the avocado in half, remove the pit, and scoop the flesh into a blender. Add the garlic, apple cider vinegar, lemon juice, parsley, basil, green onions, salt, and half the water.

Close the blender lid and blend. Pour more water through the hole in the top of the blender and blend until smooth, using as much water as needed to reach the desired consistency.

Transfer to a glass storage jar and refrigerate until ready to use.
