We have made many peanut butter cookie recipes, but this is the recipe we come back to and make week after week. Though we are huge Billie fans, that’s not why we love this recipe. Billie Eilish originally posted her vegan, gluten-free peanut butter cookie recipe on Instagram stories, but they have now been removed.

Unlike some peanut butter cookies that are dense and dry, these oat flour peanut butter cookies are moist and chewy. For this reason, we love using oat flour in gluten-free baking – like in our Vegan + Gluten Free Chocolate Banana Muffins

Ingredients in Billie’s Vegan Gluten-Free Peanut Butter Cookies

The ingredients for Billie Eilish oat flour peanut butter cookies on a marble countertop. Ingredients in bowls are: oat flour, peanut butter, brown sugar, baking soda, almond milk, vanilla, and chopped dark chocolate.

This vegan peanut butter cookie recipe calls for very simple ingredients that we always have on hand.

  • Oat Flour: We like to use the oat flour from Bob’s Red Mill. However, most of the time we simply make our own oat flour by blending oats. If you’re gluten-free, be sure your oats or oat flour are certified gluten-free as oats can be cross-contaminated during processing.
  • Peanut Butter: We use natural creamy salted peanut butter but have tested this recipe with all types of peanut butter successfully.
  • Brown Sugar: Light or medium brown sugar works best here and creates a soft and chewy cookie.
  • Baking Soda: This leavening ingredient perfectly puffs up these cookies.
  • Salt: These cookies need just a little pinch of salt, but add more if your peanut butter is unsalted. A little flaky sea salt on top is tasty too.
  • Vanilla: We use homemade vanilla extract, which is why some of the seeds are visible in the image above.
  • Chocolate: Chopped vegan dark chocolate is best for these cookies.

How to Make Oat Flour Peanut Butter Cookies

We recommend using a stand mixer to cream together the peanut butter and brown sugar. Next, the oat flour, baking soda, and salt are mixed in. Vanilla and plant-based milk are added until the dough forms.

A cookie scoop helps create uniform cookies. Just like any other peanut butter cookie, they get pressed down with a fork.

How to Store Billie Eilish’s Peanut Butter Cookies

Peanut butter cookies can typically last up to 5-7 days when stored properly in an airtight container at room temperature. If refrigerated, they can last even longer, up to 1-2 weeks.
