Billie Eilish originally posted her vegan, gluten-free peanut butter cookie recipe on Instagram stories, but they have now been removed.

- Peanut Butter: We use natural creamy salted peanut butter but have tested this recipe with all types of peanut butter successfully.
- Brown Sugar: Light or medium brown sugar works best here and creates a soft and chewy cookie.
- Baking Soda: This leavening ingredient perfectly puffs up these cookies.
- Salt: These cookies need just a little pinch of salt, but add more if your peanut butter is unsalted. A little flaky sea salt on top is tasty too.
- Vanilla: We use homemade vanilla extract, which is why some of the seeds are visible in the image above.
- Chocolate: Chopped vegan dark chocolate is best for these cookies.
How to Make Oat Flour Peanut Butter Cookies
We recommend using a stand mixer to cream together the peanut butter and brown sugar. Next, the oat flour, baking soda, and salt are mixed in. Vanilla and plant-based milk are added until the dough forms.
A cookie scoop helps create uniform cookies. Just like any other peanut butter cookie, they get pressed down with a fork.

Made with gluten-free oat flour, these cookies are naturally vegan and gluten-free. Oat flour helps keep these peanut butter cookies soft and moist.
Ingredients
- 1 cup brown sugar, loosely packed
- 1 cup peanut butter
- 2 teaspoons vanilla extract
- 1 cup oat flour (gluten-free if needed)
- 1 teaspoon baking soda
- pinch of salt
- 1/4 cup almond milk
- 1/3 cup chocolate chips or chunks
Instructions
- Preheat the oven to 350° F. Line a cookie sheet with parchment paper or a silicon baking mat.
- In the bowl of mixer, cream together the brown sugar, peanut butter, and vanilla.
- In another bowl, whisk together the oat flour, baking soda, and salt.
- Beat the oat flour mixture into the peanut butter mixture. Add the plant-based milk and continue beating until the mixture forms a dough. You may need to add a little more milk if your peanut butter is very dry.
- Stir in the chocolate. Use a cookie scoop or spoon to make balls of cookie dough and roll between your hands. Place on the prepared cookie sheet. Use a fork to press the balls down into disks.
- Bake the cookies for 10-12 minutes. Cool completely, as these peanut butter cookies will set as they cool.
