Growing up my very favorite holiday foods were pumpkin cheesecake and pumpkin pie – yum! Over the past 10+ years as a recipe developer, I’ve discovered that there are many many delicious ways to enjoy pumpkin that are vegetarian or vegan. These recipes are perfect for a Plant-Based Thanksgiving

For most of these recipes, you can use canned pumpkin or Homemade Pumpkin Puree, if you happen to have fresh pumpkins. If using canned pumpkin, be sure to use 100% pumpkin puree rather than pumpkin pie filling, which comes in similar packaging, but has added sugar and spices.
