A piadina is an Italian flatbread “sandwich” made by grilling pieces of dough and filling them with whatever you’d like. You can think of it a bit like an Italian quesadilla. 

Griddle Eggplant Parm

Plant-Based Eggplant Parmesan comes together quicker than ever by cooking eggplant slices on the griddle and then baking with sauce. Though this recipe does require an oven, you could easily serve it unassembled by cooking the eggplant slices until completely tender, then topping with warm sauce, cheese, and basil.

Blackstone Griddle Stir Fry

Stir fry is one of my favorite things to make on the griddle as the large surface area cooks the veggies evenly. This griddle stir fry recipe is below and is very adaptable. 

Yield: Serves 4

15 Blackstone Griddle Recipes + Stir Fry

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

This easy vegetable sitr-fry is a healthy and tasty recipe for your flat top or Blackstone griddle. It can, of course be made in a large wok or skillet as well. Don't miss the other 15 griddle recipes in the main post!

Ingredients

  • 1 tablespoon olive or vegetable oil
  • 1 tablespoon sesame oil
  • 1/2 white or yellow onion
  • 1 carrot, julienned
  • 2 cups broccoli florets
  • 1 bell pepper, julienned
  • 8 oz. Baby Bella mushrooms, halved
  • 2 large cloves garlic, minced
  • 1 tablespoon ginger, minced
  • sitr fry sauce or coconut aminos
  • rice, for serving

Instructions

  1. Heat your griddle to medium-high and coat with the oil.
  2. Add the veggies to the griddle and season with salt and pepper. Stir fry the veggies until tender, about 5-7 minutes. A wooden spoon moves stir fry vegetables around a flat top griddle.
  3. Add the garlic and ginger and cook another minute longer.
  4. Add desired amount of stir fry sauce or liquid aminos and stir in to coat. A hand pours stir fry sauce over vegetables on a griddle.
  5. Serve immediately over rice and garnish with sesame seeds. See variations below in notes. A bowl of rice and stir fry vegetables.

Notes

Additions:

I like to stir fry 1 block cubed extra firm tofu in a bit of oil, then set aside until the veggies are done cooking. Add it back in when you add the sauce.

Other great veggies for stir fry: snow peas, baby corn, water chestnuts, zucchini, yellow squash.

Stir fry a package of cooked udon noodles for the last few minutes.

Top with roasted cashews for added crunch and healthy fats.
