Homemade Pita Chips (Baked or Air Fried)
Homemade pita chips are so easy to make! Just 5 or 10 minutes in the air fryer or oven and they are baked to crispy perfection and ready for hummus and other dips. Let me show you how to make pita chips with a few different seasonings.
Homemade pita chips are so much tastier than store-bought, and take just a few minutes to make. You can make the sweet with cinnamon and sugar, or savory, with sea salt and/or other seasonings like za’atar.
The next time you’re at Trader Joe’s, pick up a bag of pita bread and use some for pitas stuffed with veggies, hummus, broccoli sprouts, and falafel. Use the rest for these awesome homemade pita chips.
How to Make Pita Chips
This recipe uses just one pita bread round, which makes 16 chips, though you can double or triple the recipe.
Cut the round in half, then in half the other direction, and again twice more to create 8 triangles.
Some brands of pita bread have very open pockets, like this one from Trader Joe’s. If possible, separate the layers so that you have 16 triangles. This is not necessary if the sides are stuck together, but you may need to bake for an extra minute or two, and the chips may not get quite as crisp.
Coat the triangles in cooking spray and your desired seasonings. Spread them out in a single layer so that they crisp up evenly.
My favorite way to make pita chips is in the air fryer, as they crisp up more evenly than in the oven, just like with Air Fryer French Fries.
Homemade Pita Chip Seasonings
Sea Salt
A pinch of flaky sea salt is a great option when you’re using your pita chips with a flavorful dip like our super flavorful Edamame Basil Hummus. For more flavor, try truffle salt instead.
Za’atar
This Middle Eastern spice blend is a great compliment to pita and hummus. Za’atar is a combination of oregano, thyme, sumac, and sesame seeds. You’ll still need some salt when using this.
Garlic & Herb
Garlic powder, salt, and fresh parsley make an extra flavorful pita chip that’s great on a green salad (like a fattoush salad).
Cinnamon Sugar
For a sweet treat, try homemade cinnamon pita chips. You’ll want to skip the hummus of course, but they are great on their own, as part of a dessert charcuterie board, or with a sweet cream cheese dip.

Are Pita Chips Healthy?
Pita chips can be healthy, or not. My favorite store-bought pita chips are fried in oil and very high in fat. However, there are commercially available varieties that are lower in fat. Homemade pita chips are the healthiest option, as much less oil is required for baking or cooking in the air fryer, and you can choose the quality of pita bread.
Storing Leftover Chips
Leftover homemade pita chips are best stored at room temperature in a brown bag with some ventilation in order to stay crisp. I’ve found these stay tasty for up to 2 days.
Tips and Substitutions for Perfect Homemade Pita Chips
- Oil-Free Pita Chips. You can toast these pita chips without oil, however, they won’t get quite as crispy and nicely browned. In addition, the seasonings won’t adhere.
- Gluten-Free Pita Chips. There are gluten-free pita bread brands available in stores, or you could try making your own gluten-free pita.
- 1 vs 2 Layers. Some pitas separate easily and others don’t. You can bake or airfry these pita chips in one layer or two, but the cooking time will be nearly double for 2 layer chips, and of course, you’ll end up with half as many chips.

- cooking spray (olive oil, coconut oil, etc.)
Sea Salt
- 1/4 teaspoon sea salt (or truffle salt)
Za'atar Pita Chips
- 1/4 teaspoon sea salt
- 1 tablespoon za'atar
Garlic Herb
- 1/2 teaspoon garlic powder
- 1/4 teaspoon sea salt
- 1 tablespoon chopped fresh parsley
Cinnamon Pita Chips
- 1 tablespoon sugar (turbinado or cane)
- 1/2 teaspoon ground cinnamon
- pinch sea salt
Instructions
Air Fryer Pita Chips
- Preheat the air fryer to 350°F.
- Cut the pita bread into triangles. If the bread is able to separate, separate the halves. If not, it's ok to leave together. Some brands of pita bread open more easily than others.
- Coat liberally with cooking spray (or drizzle with olive oil). Sprinkle evenly with the seasonings and place in the air fryer basket.
- Air fry for 5 minutes, or until golden and crisp. Check early as appliances and pita vary.
Oven-Baked Pita Chips
- 1. Preheat the oven to 375°F.
- Cut the pita bread into triangles. If the bread is able to separate, separate the halves. If not, it's ok to leave together. Some brands of pita bread open more easily than others.
- Coat liberally with cooking spray (or drizzle with olive oil). Sprinkle evenly with the seasonings and place on a baking sheet.
- Bake for 5-7, until golden and crisp. Check early as appliances and pita vary.
Notes
Cooking spray coats the bread most evenly, but you can drizzle some olive oil if you don't have cooking spray.
Pita bread is made up of two layers that form a pocket. You can separate the layers for thin chips, or keep the seam intact for 2-layer, thick pita chips. Keep in mind the cooking time will nearly double if you don't separate the layers, and you'll end up with half as many chips. You will also need slightly less seasoning.
