It’s funny how often the Instant Pot comes up in conversation. Friends ask me all the time if it’s worth it. Just last week while shopping at Trader Joe’s, one of my friends who works there said, “hey do you have one of those Instapot things?” The next comment is often that people think Instant Pots are only helpful for cooking meat.
This sentiment couldn’t be farther from the truth. The first year I had my Instant Pot it sat in its box, as I was too intimidated by it. But now that I’ve gotten the hang of it, the Instant Pot is one of my favorite kitchen tools. I love it far more than my slow cooker, and it’s wonderful for plant-based food. Let me share why, some of my favorite healthy Instant Pot cookbooks, and finally the best vegan Instant Pot recipes on the internet. Let’s goooooo!
What is an Instant Pot?
Instant Pot is the most popular brand of electric pressure cooker. While it doesn’t cook everything faster, necessarily, it is a set-it-and-forget-it method. I can get my recipe going in the Instant Pot and not need to mess with it while I help my kids with homework or clean up. In that way it’s like a slow cooker, but it’s opposite in terms of cooking time. The Instant Pot has multiple functions, which, depending on your model may include: yogurt, saute, rice, soup, steam, slow cook, and more.
Note: I don’t recommend the slow cook function on the Instant Pot, as I’ve found it to be much slower than traditional slow cookers.
Unlike the old stovetop pressure cookers, which terrify me, the Instant Pot has built-in safety mechanisms that make it much more user-friendly. You can buy an Instant Pot at most cooking stores these days, including Williams-Sonoma, Amazon is an easy option (affiliate links).

I personally own Vegan Under Pressure by Jill Nussinow and it’s a wonderful resource. Her recipes are a lot like my own: simple and made with real food ingredients. There are also cooking timetables for nearly everything you’d ever want to cook in the Instant Pot. The only downside is that there are very few pictures.
