10 Veggie Soups to Make this Fall and Winter
Top 10 BEST vegan and vegetarian soup recipes! These delicious and easy soups are packed with healthy nourishing ingredients. I hope they keep you warm and cozy all fall and winter long.
Autumn has arrived and I’m wistfully awaiting soup, sweater, and cute boot weather. Even though we don’t often have crisp fall days here in Central/Southern California, we actually eat soup all year long. The thing about soup is, you can pack in loads of healthy ingredients, it’s usually relatively cheap, tasty, and easy. And did I mention it gives us all the cozy feels? It does that too. With small, soft bites, soup can be a great way to serve kid-friendly veggies.
Some friends in a Facebook group were asking for tried and true soup recipes to make this fall and winter, so I put together my top 10 plant based soup recipes. Gathering these healthy soup pictures is making me seriously hungry, so let’s get to the recipes!
At the top of this post is Curried Pumpkin Lentil Soup. I love the autumn flavors bursting from this soup.
Mexican Lentil Soup
This hearty soup was inspired by my friend’s Mexican mother. After a happy hour chat about the different ways we make lentil soup, I realized it was time to switch up my usual Italian flavors. This lentil soup with Mexican flavors may just be my favorite lentil soup yet! It’s mild enough for kids, but you can spice it up with hot sauce. Lentils are a good source of plant based protein.
This lasagna soup is perfect for those nights when you’re craving some comforting hot Italian food, but short on time.
Fresh Tomato Soup
We are still getting lots of fresh tomatoes and this easy tomato soup is a great way to use them up. This is another very simple and easy soup with wonderful fresh flavors.
I absolutely love this soup. It’s easy to whip up in the blender and is my favorite way to eat broccoli. This soup gets it’s creaminess from dreamy smooth cashew cream.
With butternut squash, white beans, small pasta, and wilted spinach, this soup has a lot going for it. I add extra flavor with a dollop of pesto added at the end.
Slow Cooker Split Pea Soup
Okay, I think I like this slow cooker recipe even better than the minestrone. It requires just a few simple ingredients. Peas are another great source of plant based protein. Split pea soup is traditionally made with ham, but this vegan soup isn’t lacking in flavor without it.
Vegan Mulligatawny Soup
I first tried mulligatawny soup at an Indian restaurant years ago. It has turmeric and curry flavors and is usually made with chicken, apples, rice, and vegetables. This vegan version is filled with lentils, veggies, chickpeas, and coconut milk.
Tuscan Lentil Soup
This Italian tomato based lentil soup is topped with lots of fresh basil.
This super creamy soup is a great way to use up cauliflower in a comforting and delicious way!
Bonus!
Is ramen a soup or no? With its warm broth-y base, I say yes, while Yummy Hubby says no. Who is right? When our local ramen restaurant didn’t offer a meatless ramen noodle bowl, I went home and created my own!
That’s it, guys! I hope you found a few new soup recipes to nourish body and soul. Let me know which is your favorite and tag me on Instagram @YummyMummyKitchen
