We got veggie burgers and fajitas, but this delicious cold soba noodle dish was my personal favorite, so I wanted to share it with you. Though I had heard of One Potato Box before and Catherine and I are Instagram friends, I hadn’t tried it. I had tried a meal delivery service once before but didn’t share it with you because it didn’t end up being something I would personally use or recommend. That company shall remain nameless, but the ingredients seemed to be lower quality than the staples I keep in my pantry and fridge. I ended up giving much of the produce to our chickens and guinea pigs and using our own. So I’ve been skeptical of these types of boxes until now. One Potato Box was a totally different experience and I was pleasantly surprised in several ways. While I chose the vegetarian box, there is an omnivore box as well.
Things we loved about One Potato Box
Organic ingredients. One Potato Box uses organic local produce and protein. I was so relieved to see that organic label on the block of tofu. I loved that the ingredients were of the quality I would normally buy.
Family friendly meals. Most of my friends are parents with kids under 10, so it’s great that these meals aren’t too spicy or complicated. The recipe cards even come with tips for getting kids involved in the cooking process.
Surprise dessert. Another fun surprise was the organic slice and bake cookie dough. We got cherry rugelach – a far cry from grocery store cookie dough!
Dinner help. This seems obvious, but it really was so nice to have a break from thinking of something to make for dinner, grocery shopping, and prepping. One Potato would be such a helpful gift for new parents. I know I’ll be giving a subscription the next time I attend a baby shower. Having ingredients prepped and an easy to follow recipe card ready makes cooking a great meal easy for those who may not be confident in the kitchen. I loved being able to turn the cooking over to my husband one night.
