Pomegranates are big in our house. The girls eat the seeds by the spoonful and packed in their lunch boxes. I love them on yogurt, pancakes, well really on anything. They just make everything sweeter, fresher, and prettier. Like jewelry for food.
When we’re busy (which is like, all the time) I love the prepackaged pomegranate seeds. My current favorite thing to do with pomegranate seeds is use them in savory dishes like salads and salsas. This Pomegranate Avocado Salsa is a delicious sweet and tangy compliment to tacos, burgers, quesadillas, or just chips.
This salsa and a glass of Champagne or sparkling apple juice with a few pomegranate seeds would be perfect for New Year’s Eve next week.
