Merry Christmas, Happy Holidays & Gluten Free Pancakes
I’m happy to report that we will be staying in our cozy home this Christmas. We’ve enjoyed several holiday parties, including a night of dinner and dancing with our mommy & daddy friends for our annual holiday “work” party. Because being a stay-at-home mom is the hardest (and best) job in the world.

I’ll leave you with some gluten free pancakes for an easy and healthy Christmas morning breakfast. These are made with almond flour, making them low-carb and adding a nutty flavor and texture. Not to mention a healthy dose of Vitamin E, protein, fiber, and good fats. Don’t pomegranate seeds just make everything better? They’re the perfect holiday touch.
Gluten Free Almond Flour Pancakes
printer friendly recipe
1 cup almond flour
2 eggs
1/2 cup milk
2 T coconut oil
1 teaspoon vanilla
1/4 teaspoon cinnamon
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little butter. The only real difference is that they won’t “bubble” on top the same way as regular pancakes. Flip them when the underside is brown.

I've never made pancakes with almond flour before! I hope to give these a try. There's nothing better than a golden stack of pancakes. The pomegranates are beautiful over top too.

I must try this. I always buy the gluten-free pancake mix at Lassen's. I have to make my pancakes thin the way we eat them in Sweden though.

oh marina, these are gorgeous and would make anyone feel so special! i will def check out these other recipes, esp the macarons. whipped some up today and actually waited in line for an hour to buy the dreamiest ones from Laduree in NY on monday. vanilla, caramel, pistachio, and raspberry!

Such pretty photos of the pancakes. I cook gluten-free for hubby and I think, he will like these with almond flour. Thanks.
I tried this recipe and it was so-so. After tasting the first round, which were quite bland, I added a pinch of sea salt, some cinnamon, and turbinado sugar which helped. Also, the pancakes were completely flat (more like crepes) and looked nothing like the photos. Did you whip the egg whites separately to give them extra fluff?
Hi Carolyn, So sorry you didn't like the recipe. I didn't whip the eggs separately, but do use a wire whisk to combine ingredients. They actually were fluffier than I wanted, but you can use sparkling water if you want them fluffier, or use less water. It will vary greatly depending on your almond flour. I didn't include salt in the ingredients as almond flour sometimes is a bit salty already.

Did you use good quality vanilla extract? Also I recommend coconut oil over vegetable oil.
