Blueberry – Goat Cheese Crositni
Yep, here is another blueberry recipe. This one is fancy enough for a cocktail party but quick enough for an everyday snack. I like the tangy goat cheese with the sweetness of the blueberries. The more jam you use the sweeter it will be, and if it’s too sweet it will overpower the goat cheese. The blueberries should just be lightly glazed.
Blueberry – Goat Cheese Crostini
Makes 24 pieces
1 baguette, sliced crosswise into 24 (1/2 inch thick) pieces and lightly toasted
8 oz. goat cheese, room temperature
1/2 cup blueberry jam
1 cup fresh blueberries
In a small microwave safe bowl, cook the jam at 10 second intervals until liquefied. Place blueberries in a medium bowl and gently stir in the jam until the berries are just lightly coated.
Spread a generous layer of goat cheese atop each piece of toast. Top with a spoonful of blueberries.
