Easy Healthy Vegetable Empanadas
I had half a package of wonton wrappers to use up in the fridge. Wonton wrappers, by the way, are so much fun to use in unconventional ways. Homemade ravioli without making homemade pasta, for example. We mixed up a filling of black beans, white cheddar cubes, and corn and diced zucchini we had in freezer with a little cumin, salt and pepper. You could substitue any veggies you have on hand. Sweet potato, winter squash, mushrooms, and winter greens would all be delicious.

Easy Healthy Vegetable Empanadas

Makes about 20
1 cup cooked black beans
1 cup favorite vegetables (diced and uncooked. I used corn and zucchini.)
1/3 cup cubed cheddar or jack cheese
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1 package 3-inch wonton wrappers
1 cup guacamole for dipping
cilantro for garnish (optional)
Preheat oven to 425 degrees F. In a medium bowl, stir together beans, vegetables, cheese and spices. Arrange wonton wrappers over a baking sheet lined with parchment paper. Place about a tablespoon of the bean/vegetable filling in the center of each wrapper. Wet the edges of each wrapper and place a second wrapper on top. Gently twist the bottom wrapper edges over the top to seal. Bake for 10 minutes or until wrappers are golden brown.
Serve with guacamole and garnish with cilantro, if desired.

Love this! I've actually never made empanadas for the simple reason that I can't justify making something so unhealthy for just me and my boyfriend. This is an awesome healthy adaptation that I will for sure be trying soon. Thanks for sharing!

this may be the answer i've been looking for! we go to a yucatan restaurant that makes potato and guacamole empanadas that are to die for. the are drizzled with a balsamic reduction and i think these wonton wrappers would be perfect! so excited. thanks for sharing!

Was going to make these, but realized I'm having a hard time finding wonton wrappers. Haven't tried Trader Joe's yet…would they have them? Fresh or frozen section?
Hi Rachel! They would be refrigerated by the tofu or Asian products. I got mine at Whole Foods. haven't seen them at Trader Joe's.
I found mine at a normal grocery store. You can normally find them in the produce section next to the tofu and “fake meat”.
These taste amazing, especially with guac. I ate 10 of them in one sitting! I am also pregnant and was very hungry when I made these. =) I was out of parchment paper so I used aluminum at first which I would not recommend. The second batch I baked I used spay on the pan and they came off MUCH easier.

These were awesome!!!! I made them last night. I added red bell pepper to my veggie mix as well. I'm out of parchment paper so I just sprayed the pan and they came up no problem, no mess. :]
