Pomegranate Avocado Salsa

Pomegranates are big in our house. The girls eat the seeds by the spoonful and packed in their lunch boxes. I love them on yogurt, pancakes, well really on anything. They just make everything sweeter, fresher, and prettier. Like jewelry for food.
When we're busy (which is like, all the time) I love the prepackaged pomegranate seeds. My current favorite thing to do with pomegranate seeds is use them in savory dishes like salads and salsas. This Pomegranate Avocado Salsa is a delicious sweet and tangy compliment to tacos, burgers, quesadillas, or just chips.

This salsa and a glass of Champagne or sparkling apple juice with a few pomegranate seeds would be perfect for New Year's Eve next week.

Want some free pomegranate seeds? POM is giving TEN readers a coupon for free Pom Poms pomegranate arils. They come in sealed cups with a spoon included and are an easy addition to meals on the go. I would definitely pack these in picnics and soccer game snack bags.

Is there any way I can serve this as an appetizer? The combination of all the ingredients sound amazing! I'm having Girl's Night with a few of my Bff's and would love to serve this!

    1. Sure! I just wouldn't make it more than an hour early as avocado can brown easily. Would be great for a girls' night! Have fun!!!
