Watermelon and Feta Bites

Last week when the girls came over for happy hour and the kids made mud pies in the backyard we nibbled on these cool/sweet/salty bites of summer. They are super simple to throw together and look so cute. I assembled these bites a few hours in advance, (while little munchkin was sleeping and I had TWO hands for cutting watermelon) covered the dish in plastic wrap, and refrigerated until our friends arrived. 
 

Watermelon Feta Bites

Serves 6

2 tablespoons syrupy balsamic vinegar (il Fustino 25 Year Balsamic recommended)
1 small seedless watermelon, cut into 1-inch cubes
1 small bunch basil
5 oz. feta cheese, cut into 1" x 1" x 1/2" squares

Drizzle a serving dish with balsamic vinegar.

Skewer one cube of watermelon, one basil leaf, one feta slice, and another watermelon cube onto a decorative toothpick. Repeat until all ingredients have been used. Place Watermelon Feta Bites on balsamic drizzled serving dish.

  1. Such an interesting combination. At the mexican markets here, they eat slices of watermelon with spices sprinkled on top. This reminds me of that sweet/savory combination. I would love to try it.

    I love watermelon and feta...these look refreshing. The detail of just blue pics also looks pretty. I like the turquoise square paper plates...so coastal/summery.

    I did this over the weekend, but used a star shaped cookie cutter to cut out the watermelon and feta... so cute and festive! (And delicious of course)

  18. I had the most fabulous watermelon and feta salad last summer and came home and tried to replicate it and it just missed the mark. These are beautiful and easy and I am sure with the balsamic are fabulous tasting as well. It is such a great combination that is really quite surprising.
