Thank you for all the sweet comments and email about my
book 🙂 I’m so lucky to have you along for the ride and cheering me on in this endeavour!
Today’s simple recipe comes courtesy of my 4-year-old. Homemade granola is a staple in our house. We all love it for snacking and breakfast, and homemade is much lower in sugar than store-bought. The other afternoon while B was having her snack, I noticed her happily pouring her granola into the centers of her strawberries. What a great idea! The past few days the girls and I have been enjoying her creation placed in a bowl of yogurt for a fun gluten-free breakfast or after-school snack.
Yummy Hubby Santa likes to leave kitchen gadgets in my stocking at Christmas. Last year he left this strawberry huller he found at Williams-Sonoma. I will admit I initially thought this was a silly tool and would have never bought it for myself. But it has turned out to be a great little gadget – the kids love having the tops off their strawberries and it is even quicker than using a knife. Plus it’s fun to do and leaves a perfect cavity for filling with delightful things like whipped cream and granola.
The girls absolutely love making and eating this. I can’t blame them… it’s totally delicious and much more interesting than a typical bowl of granola.
This recipe works best with big strawberries. The teeny tiny cute-as-a-button ones from our garden would not work here.
Aren’t you glad it’s spring?!
Granola Stuffed Strawberries
1 pint large fresh organic strawberries
1 cup granola (see my homemade recipes
here and
here)
1 cup favorite yogurt (I like Greek yogurt with a little drizzle of agave syrup)
Using a paring knife or strawberry huller, remove tops and hulls of strawberries. Fill centers with granola and place in a bowl filled with yogurt.
Looks like a fabulously healthy snack : )
What a great idea¨Those must be so delicious. A wonderful treat.
Cheers,
Rosa

Great idea, probably better than the nutella stuffed ones I've developed a problem with…. do you think a second lawsuit against Nutella would be sucessful? 😉
I must try these. Would make this breakfast hater into a breakfast lover if these were in a bowl in the morning.
Marina,
The apple clearly doesn't fall too far from the tree…I believe your daughter is on her way to cooking, like mommy. I have stuffed strawberries with a cream cheese concoction before but the granola idea is inspired. I will have to try this.
I love that huller, I used to have one that was like a pincher but it never really worked. This looks great. Thanks.

Ahhh, here is the recipe you hinted about from twitter! It looks healthy and easy plus delicious of course. I like that little strawberry gadget you have. I may have to pick one up as we go through caseloads of strawberries this time of year. I love little kitchen gadgets that actually work and are efficent.
So sweet and creative! I would have never thought of something like this, and now I want a strawberry huller! My daughter would love these, thanks for sharing!
Beautiful shots as usual too btw 😉
Awesome idea! I have to say I'm now wondering if I should invest in a strawberry huller for the ton of strawberries I plan on picking when they're ready locally 😀 I really love the yogurt and granola idea though – must try that for my kiddos!
Absolutely beautiful and delicious!

This has got to be one of the best breakfast ideas I have seen. My son would love these!
And I have to ask, what camera do you use? Looking to upgrade my lens on my Canon:)
Cheers,
Anna
Lovely! I may have to use a knife in scraping off the insides of the strawberries. Wish I could ask Santa for that same cute funky gadget. This is a real Spring Breakfast Recipe! =)
This looks like a great idea for a quick snack or breakfast.
this is so cool never seen anything like granola strawberries before 😉 Do you think you'd be interested in submitted your photos to my food gallery site: http://www.healthfreakfood.tumblr.com it's fast growing and features many beautiful photos of healthy, fresh, whole food dishes such as yours.
Just saw these on Pinterest. Genius!!
Hi Marina, guess it was fate that brought us together (or Pinterest …) I just placed my very first batch of homemade granola in the oven and can not wait to taste it later. I just so happen to have some fresh strawberries in the fridge we need to use up. Guess i know what we'll be snacking on later 🙂 Your blog is heavenly! Really … adding it to my reader RIGHT now.
Wow, it's fantastic! Best ideas are the simple ones.
All the best for you and your family ♥
