purple kale chips: easy healthy snack recipe

I’m excited to share this super healthy snack with you today. Purple kale chips are crispy and salty and gorgeous. Any recipe that gets my kids to happily eat an entire bunch of kale is a winner in my book.
Last weekend the girls and I strolled through the farmer’s market filling up our bags with berries, blood orange juice, beets, and greens. I hope this cute farmer doesn’t mind being on the blog 🙂 I can’t remember which farm this lovely display is from. Maybe McGrath? Any Santa Barbara friends know? Perhaps I’ll go find out next Saturday. Our favorite treasure from the day was a bunch of purple kale.
I’ve had kale chips from the grocery store and was not impressed, although the kids liked them. These were so easy to make and were devoured less than an hour after they came out of the oven. The purple kale made more delicate kale chips, and of course was more beautiful than any store-bought kale chips. Tuscan or lacinato kale can be substituted, but the ribs will need to be removed and the kale will need to be cut into smaller pieces. Salty crispy purple kale chips are my new favorite way to get kids eating greens. We will definitely be making these again next weekend.
Purple Kale Chips
1 bunch purple kale
2 tablespoons olive oil
coarse sea salt
Preheat oven to 300 degrees F. Trim an inch off the ends of the stems. Drizzle kale with olive oil and toss to coat. Sprinkle with salt. Place kale on a cookie sheet and bake for 15 minutes, turning once.

Oooh, so pretty! I've never even seen purple kale before, but kale is getting more and more popular at our farmers market so I can't wait to see what's there this summer. We love kale chips, but I think my daughter would especially love these 😀

I love homemade kale chips! The easiest of snacks and totally beats buying them. I also love roasting my own seaweed which the girls love! Nothing like a little salty treat;)

My daughter adores kale chips, but I have never tried purple kale. I am really looking forward to it! What a wonderful time it must have been to take your girls to a local farmer's market and stroll the seasonal, fresh food!
I don't think I have ever seen purple kale and that is a shame. It looks absolutely beautiful.
I have never seen purple kale, than again I never looked for it. I am not a fan of regular kale, but I'm will to try the purple. I'll have to look for it at the Farmers Market next weekend! Wonderful, healthy recipe.

i agree, the purple kale is just so pretty. i've got to make a bunch. so much better than real chips. and i need to get over chips once and for all!
I have a friend who makes them in her dehydrator and I could seriously eat the whole jar she gives us but my wife usually beats me to it. I must try them in the oven and kale is super nutritious!!

I LOVE kale chips but have yet to try the purple color. I also like mine with a little splash of vinegar. Yum!
never tasted kale, unfortunately…would spinach hold up the same way??

I must say that this recipe is really refreshing. I didn't know that purple kale can be prepared as a chips. It looks amazing, even better,I like the fact that it is healthy and easy to prepare.

Hi girl! Were on the same boat this week as I just posted a kale salad recipe. I love all types of kale whether it be purple, green or black kale. Just give me a plate of it and I am a happy woman. These kale chips of yours look so darn pretty and crisp and crunchy! I mean you literally made something as simple as kale chips look as good as a slice of chocolate cake!
They look too pretty to eat! Can't believe the texture is crunchy. Have to try these.
