Merry Christmas & Happy Holidays to you and your family wherever you are. This has been such a wonderful year and I have loved getting to know you. I’ve made friends with readers and bloggers all over the world and got real holiday cards in the mail from my closest blogger friends this year. Thank you! 

I’m happy to report that we will be staying in our cozy home this Christmas. We’ve enjoyed several holiday parties, including a night of dinner and dancing with our mommy & daddy friends for our annual holiday “work” party. Because being a stay-at-home mom is the hardest (and best) job in the world.

I’ll leave you with some gluten free pancakes for an easy and healthy Christmas morning breakfast. These are made with almond flour, making them low-carb and adding a nutty flavor and texture. Not to mention a healthy dose of Vitamin E, protein, fiber, and good fats. Don’t pomegranate seeds just make everything better? They’re the perfect holiday touch.

Gluten Free Almond Flour Pancakes

1 cup almond flour
2 eggs
1/2 cup milk
2 T coconut oil
1 teaspoon vanilla
1/4 teaspoon cinnamon

Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little butter. The only real difference is that they won’t “bubble” on top the same way as regular pancakes. Flip them when the underside is brown.
