Baked Spaghetti Squash and Meatballs
An easy recipe for baked spaghetti squash filled with Italian flavors!
Look at those “noodles”! Right, so spaghetti squash noodles really don’t taste much like noodles at all. They have that fun spaghetti shape, but not the same bite at all. The great thing about spaghetti squash though, is that it is practically tasteless. So it can take on any flavor you want to add, from the marinara sauce here, to pesto, to Pad Thai.

Vegetarian Stuffed Spaghetti Squash
INGREDIENTS
- 1 large Spaghetti Squash
- 1 batch prepared veggie meatballs
- 1 jar Marinara or spaghetti sauce
- 1/2 cup Mozzarella cheese (I like Miyoko’s Mozz)
- 1/2 cup Parmesan cheese (I like Follow Your Heart brand)
- 1 cup fresh basil, torn or sliced
INSTRUCTIONS
- Preheat oven to 375 degrees F. Cut squash in half lengthwise. Scoop out seeds. Brush or drizzle with olive oil. Place on a baking sheet, cut side down and bake for 30-40 minutes. Cool slightly on baking sheet. Turn oven up to 400.
- Using a fork, scrape squash “spaghetti” up from the rind and fluff into strands. Place meatballs over squash. Pour sauce over. Sprinkle cheeses over sauce. Bake stuffed squash halves on cookie sheet until cheese is melted and bubbling. Top with fresh basil and serve right out of the squash!

How do you have the time to do all these amazing things? I've never seen spaghetti squash served in the squash, and I have to say it's completely gorgeous. The colors and textures in your photos make it look so tempting.

I really want to try this as we have never had spaghetti squash before. DId your kids like it? I am always trying to find some meatless recipes and tend to make pasta a lot because you can do so much with it. This might be a good substitute for pasta.

I LOVE LOVE LOVE spaghetti squash… I noticed how you cut around the stem and I have to say thats so clever! Being a health counselor, I am always recommending this healthy alternative to my clients, and they always love it! I never thought of making it a “baked pasta” version with the sauce and some homemade turkey meatballs inside! What a beautiful and unique presentation too! I love you so much. haha, I've been “squashing” for a while now and ADORE spaghetti squash, but I started to get frustrated that once I've halved and roasted them, I had to let them cool and carefully scrape them into bowls.
I made a cod alfredo for mine – I used alfredo sauce, leftover lemon cod, and fresh pesto. For my hubby's, I made him seared steak and spaghetti sauce with melted cheese. We LOVED them! Your idea made squash even MORE appealing to me (I didn't know that was possible, haha!). Thanks for sharing! 🙂

If your noodles are too crunchy, could it be that you are cooking it with cut side up inside of cut side down on the cookie sheet, brushed with oil or butter. mmmmmmm
To be completely honest, this is my first time to hear about spaghetti squash. This really sounds interesting and your photos of the dish are making me crave for it.
